1 cup all-purpose flour
½ cup cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
½ stick butter (room temperature)
2 oz dark chocolate bar (chopped up and melted)
⅔ cup dark brown sugar
⅓ cup granulated sugar
1 large egg + 1 yolk
1 cup dark chocolate chips
12 regular Campfire Marshmallows
In a medium bowl, combine all the dry ingredients.
In a separate bowl, beat together the butter, melted chocolate, brown sugar and granulated sugar. Once combined, beat in the egg.
Add your dry ingredients in thirds. Mix gently in between each addition. Be careful not to overmix the batter.
Add in the chocolate chips and mix gently just to combine.
Make a total of 6 giant cookie balls and place 2 Campfire marshmallows in each one. Make sure the cookie dough completely covers the marshmallows.
Once ready to bake, preheat the oven to 350°F. Line 2 cookie sheets with parchment paper or a silicone baking mat. Place no more than 3 cookies on one sheet pan.
Bake at 350°F for 15-18 minutes depending on size of the cookie.
Edges should be a little crispy and the top will look soft.
Allow to set before removing from the sheet pan.
