One-Layer Cake:
2/3 cup all-purpose flour
2/3 cup sugar
3/4 teaspoon soda
1/2 tsp salt
1/2 tsp vanilla
1/4 cup shortening
2 eggs
1 ounce unsweetened chocolate, pre-melted or solid, melted
2 tbsp water
1/2 cup dairy sour cream
10 to 12 regular marshmallows, cut in half
Two-layer Cake:
1-1/3 cups all-purpose flour
1-1/3 cups sugar
1-1/2 tsp soda
1 tsp salt
1 tsp vanilla
1/2 cup shortening
4 eggs
2 ounces unsweetened chocolate, pre-melted or solid, melted
1/3 cup water
1 cup dairy sour cream
20 to 24 regular marshmallows, cut in half
Place all ingredients, except marshmallows, in mixing bowl. Blend at lowest speed, then beat at medium speed 2 minutes. Spread batter in one or two 9-inch round, 8×8 or 10×6 inch baking dishes.*
Microwave at 50% (Medium) 6 minutes. Rotate 1/4 turn every 3 minutes. Increase power to High. Microwave 2 to 5 minutes, or until done. Let stand directly on countertop 5 to 10 minutes.
To frost: place marshmallows, cut side down and close together, on cake after it has stood 3 to 4 minutes. Cool cake and frost with chocolate frosting. Cut between marshmallows. Cake slices more easily if allowed to stand several hours after frosting
