1 1/2 cups light brown sugar, packed
1/2 cup unsalted butter, melted
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract
1 1/2 cups gluten free flour mix
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup mini chocolate chips
1 package Campfire Red, White, and Blue Roasters
Preheat oven to 350 degrees F. Spray a rimmed baking sheet with non-stick spray. Set aside.
In a large bowl, mix together brown sugar, butter, eggs, and vanilla.
In a second bowl, whisk together gluten free flour mix, baking powder, and salt. Add to the wet ingredients and mix with a fork until just combined. Fold in chocolate chips.
Spread blondie mixture onto prepared baking sheet and bake for 12-13 minutes or until golden brown. Test with a toothpick to ensure blondies are done.
Allow to cool completely on a wire rack before cutting. Cut blondies into 2 inch squares.
Roast one Campfire Red, White, and Blue Roaster and place between two blondie squares. Enjoy!
