20 rectangle graham cracker sheets
10 regular sized Campfire marshmallows
2 cups semisweet chocolate chips
3 Tablespoons vegetable oil
Working two graham cracker sheets at a time, place grahams on a plate covered with a wet paper towel. Microwave for about 30 seconds, until soft.
Working quickly, cut each graham rectangle into two circles, using a 2 inch round cookie cutter. Repeat until you have 40 circles.
Slice each marshmallow in half horizontally and set aside.
In a large microwave-safe bowl, heat chocolate chips and vegetable oil in the microwave, stopping every 20 seconds to stir until smooth.
Use a bit of melted chocolate to attach marshmallow halves to the grahams. Use another bit of melted chocolate to attach a second graham, forming a sandwich cookie.
Place cookies in the refrigerator for a few minutes to set.
Line a baking sheet with wax paper. Dip each sandwich cookie in the melted chocolate, lifting out of the bowl with a fork and allowing the excess chocolate to drip off. Place coated cookies on prepared baking sheet until firm.
